Ingredients
Serves 6
- 6 slices brioche loaf
- 2 tbsps. unsalted butter
- 1 tbsp extra-virgin olive oil
- 4 cups sliced onions
- 1/4 cup creme fraiche
- 2 tbsps. chopped chives
- 6 large eggs
Method
- Toast the brioche until just golden and keep warm
- Melt the butter in a large skillet over medium heat
- Stir in the oil
- Add the onions and cook over low heat, stirring often until golden and caramelized, about 20-25 minutes
- Remove from the heat and keep warm
- Whisk together the creme fraiche and chives in a small saucepan
- Heat over low until just warm, about 2-3 minutes
- Set aside
- Poach the eggs according to your preferred method
- Divide the onions evenly over the pieces of toast
- Make a well in the center of each and scoop 1 of the poached eggs into the middle
- Drizzle the creme fraiche evenly over the eggs to serve
