Eggs In Potato Nests With Bacon Recipe

Ingredients

Serves 6

  • 3 large Russet or other white potatoes, peeled and quartered
  • 1 tbsp unsalted butter, melted
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp cayenne pepper
  • 6 large eggs
  • 6 slices bacon
  • 1 1/2 tsps. chopped flat-leaf parsley

Method

  1. Cover the potatoes with cold salted water in a medium saucepan
  2. Bring to a boil over high heat
  3. Lower heat to a simmer and cook until just tender when pierced with a fork, about 10 minutes
  4. Do not cook through
  5. Drain and allow to cool
  6. Preheat the oven to 400 degrees F
  7. Lightly grease 6 individual ramekins and set them on a baking sheet (alternately use large muffin tins)
  8. Coarsely grate the potatoes
  9. Mix in the butter, paprika, salt and cayenne pepper
  10. Divide the potatoes evenly among the ramekins and press them against the bottoms and sides to form the nest
  11. Bake for 15-18 minutes, until lightly browned
  12. Place one egg into each nest
  13. Return to the oven and bake for 10-12 minutes, until the white is cooked through and the yolk is just set
  14. In the meantime, saute the bacon in a medium skillet over medium-high heat until fat is rendered and the bacon is crisp and lightly browned
  15. Drain on paper towels and coarsely chop
  16. Sprinkle the bacon evenly onto the potato nests (alternately serve on the side)
  17. Carefully remove the nests from the ramekins and sprinkle with parsley to serve
