Ingredients
Serves 6
- 6 (1/2-inch-thick) slices rustic
- sandwich bread, lightly toasted
- 6 tbsps. unsalted butter
- 6 large eggs
- salt and freshly ground black pepper
- 6 tbsps. unsalted butter
Method
- Use a 2-inch round cookie cutter (or a small juice glass) to cut a hole out of the center of each slice of bread
- Melt 1 tbsp butter in a large skillet over medium heat
- Place 2 bread slices into the skillet
- Divide 1 tbsp butter among the holes of each piece
- Crack an egg into each hole and cook until egg is set, about 7-8 minutes
- Remove from the pan and repeat, cooking two at a time with the remaining 4 slices
- Season with salt and pepper to taste to serve
