Eggplant Walnut Spread Recipe

Ingredients

Makes about 2 1/2 cups

  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 1 small eggplant, peeled and cut into 1/2-inch dice
  • 2 garlic cloves, chopped
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground cayenne
  • 1/2 cup chopped walnuts
  • 1 tablespoon fresh minced basil
  • 2 tablespoons vegan mayonnaise
  • 2 tablespoons chopped fresh parsley, for garnish

Method

  1. In a large skillet, heat the oil over medium heat
  2. Add the onion, eggplant, garlic, salt and cayenne
  3. Cover and cook until soft, about 15 minutes
  4. Stir in the walnuts and basil and set aside to cool
  5. Transfer the cooled eggplant mixture to a food processor
  6. Add the mayonnaise and process until smooth
  7. Taste, adjusting seasonings if necessary and then transfer to a medium bowl and garnish with the parsley
  8. If not using right away, cover and refrigerate until needed
  9. Properly stored, it will keep for up to 3 days
