Egg Nog Cheesecake Recipe

Ingredients

CRUST:

  • 12 ounces gingersnaps, finely ground
  • 1/4 cup sugar
  • 1/4 cup melted butter
  • 32 ounces low-fat cream cheese
  • 4 large eggs
  • 2 cups refrigerated eggnog, divided
  • 2 cups powdered sugar
  • 2 tablespoons all-purpose flour
  • 1 cup whipping cream

Method

  1. Preheat oven to 325F
  2. In a large bowl, combine crushed cookies, sugar and butter
  3. Press into the bottom of a 9 inch springform pan
  4. In a large bowl, beat cream cheese until smooth
  5. Add in eggs one at a time until just combined
  6. Mix in 1 ½ cups eggnog
  7. Fold in powdered sugar and flour
  8. Pour into crust
  9. Bake for 60 minutes
  10. Cool in unheated oven with door ajar
  11. Cover and chill overnight
  12. Beat whipping cream to stiff peaks
  13. Fold in remaining eggnog and spread over cheesecake
  14. Garnish suggestion – fresh ground nutmeg
