Ingredients
Makes 4 servings
- 2 tablespoons fresh lime juice
- 1 teaspoon grated fresh ginger
- 1/2 teaspoon sugar
- 1/4 teaspoon salt
- 2 tablespoons grapeseed oil
- 2 tablespoons toasted sesame oil
- 3 ounces snow peas, trimmed and blanched
- 1 1/2 cups cooked fresh or frozen shelled edamame
- 1 large carrot, shredded
- 1 medium yellow bell pepper, cut into matchsticks
- 3 green onions, minced
- 1 tablespoon minced fresh parsley or cilantro
Method
- In a small bowl, combine the lime juice, ginger, sugar, salt, grapeseed oil and sesame oil
- Mix well and set aside
- In a large bowl, combine the snow peas, edamame, carrot, bell pepper, green onions and parsley
- Add the dressing, toss gently to combine and serve
