Edamame Snow Pea Salad Lime-Ginger Dressing Recipe

Ingredients

Makes 4 servings

  • 2 tablespoons fresh lime juice
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt
  • 2 tablespoons grapeseed oil
  • 2 tablespoons toasted sesame oil
  • 3 ounces snow peas, trimmed and blanched
  • 1 1/2 cups cooked fresh or frozen shelled edamame
  • 1 large carrot, shredded
  • 1 medium yellow bell pepper, cut into matchsticks
  • 3 green onions, minced
  • 1 tablespoon minced fresh parsley or cilantro

Method

  1. In a small bowl, combine the lime juice, ginger, sugar, salt, grapeseed oil and sesame oil
  2. Mix well and set aside
  3. In a large bowl, combine the snow peas, edamame, carrot, bell pepper, green onions and parsley
  4. Add the dressing, toss gently to combine and serve
