Ingredients
- Serving Size : 8
- 2 tablespoons butter or margarine
- 1/2 cup scallions – chopped
- 1 package rice,brown – uncooked(12oz)
- 3 1/2 cups vegetable broth – clear
- 1 teaspoon salt
- 1/2 teaspoon tabasco sauce
- 1/2 cup sunflower seeds – hulled
- 1/2 cup carrots,diced – pared
- 1 zucchini – halved/sliced 1/2″
- 1 1/2 cups broccoli – cubed
- 3 cans tuna – drained(7oz)
Method
- Melt butter in a flameproof 3-quart casserole.
- Add scallions and rice; cook, stirring frequently, until rice is golden brown.
- Stir in vegetable broth; bring to a boil.
- Remove from heat.
- Cover and bake in preheated 375:F oven 45 minutes
- Remove casserole from oven; stir in salt, Tabasco sauce, sunflower seeds, carrots, zucchini and broccoli.
- Return to oven; bake 20 to 25 minutes longer.
- Just before serving, mix in tuna.
