Ingredients
- 1 1/4 cups graham cracker crumbs
- 1/4 cup white sugar
- 2 teaspoons ground cinnamon
- 1/3 cup butter, melted
- 2 (10 ounce) packages frozen, sweetened sliced strawberries, thawed and drained
- 1 tablespoon cornstarch
- 3 (8 ounce) packages cream cheese, softened
- 1 (14 ounce) can sweetened condensed milk
- 1/4 cup lemon juice
- 1/2 teaspoon vanilla extract
- 3 eggs
- 1 tablespoon water
Method
- In a large bowl, combine graham cracker crumbs, sugar, cinnamon and butter
- Press into the bottom a 9 inch springform pan
- Refrigerate for 30 minutes
- Preheat oven to 300F
- Place strawberries and cornstarch into a blender and puree until smooth
- Transfer to a saucepan and bring to a boil for 2 minutes, until thickened and shiny
- Transfer 1/3 cup sauce into a sealable bowl and refrigerate
- In a large mixing bowl, beat cream cheese until smooth
- Add in condensed milk, vanilla and lemon juice, then eggs one at a time until just combined
- Pour half of mixture into crust
- Spoon half of the strawberry mixture over top, then remaining batter, and again top with remaining strawberry mixture
- Use a knife to swirl into a marbled pattern
- Bake 45 to 50 minutes, until almost set
- Cool, cover and refrigerate
- Serve with reserved strawberry sauce
- Thin with water if necessary
- Garnish suggestion – whipped topping and fresh strawberry slices
