Easy Strawberry Cheesecake Recipe

Ingredients

  • 1 1/4 cups graham cracker crumbs
  • 1/4 cup white sugar
  • 2 teaspoons ground cinnamon
  • 1/3 cup butter, melted
  • 2 (10 ounce) packages frozen, sweetened sliced strawberries, thawed and drained
  • 1 tablespoon cornstarch
  • 3 (8 ounce) packages cream cheese, softened
  • 1 (14 ounce) can sweetened condensed milk
  • 1/4 cup lemon juice
  • 1/2 teaspoon vanilla extract
  • 3 eggs
  • 1 tablespoon water

Method

  1. In a large bowl, combine graham cracker crumbs, sugar, cinnamon and butter
  2. Press into the bottom a 9 inch springform pan
  3. Refrigerate for 30 minutes
  4. Preheat oven to 300F
  5. Place strawberries and cornstarch into a blender and puree until smooth
  6. Transfer to a saucepan and bring to a boil for 2 minutes, until thickened and shiny
  7. Transfer 1/3 cup sauce into a sealable bowl and refrigerate
  8. In a large mixing bowl, beat cream cheese until smooth
  9. Add in condensed milk, vanilla and lemon juice, then eggs one at a time until just combined
  10. Pour half of mixture into crust
  11. Spoon half of the strawberry mixture over top, then remaining batter, and again top with remaining strawberry mixture
  12. Use a knife to swirl into a marbled pattern
  13. Bake 45 to 50 minutes, until almost set
  14. Cool, cover and refrigerate
  15. Serve with reserved strawberry sauce
  16. Thin with water if necessary
  17. Garnish suggestion – whipped topping and fresh strawberry slices
