Ingredients
- 1 1/2 qt. milk
- 1 c. sugar
- 1 c. rice
- 2 eggs, well beaten
Method
- In a large pan, combine sugar, milk and bring to a scalding point
- Add rice and lower heat to medium
- Stir mixture often and cook for 60-70 minutes
- Remove from burner and quickly add beaten eggs a little at a time
- This makes a creamy rice; however, if a thicker rice is desired, increase amount of rice to 1 1/4 cups and add another egg
- Be careful when adding eggs so they don’t congeal
- Pour cooked rice into serving dishes and sprinkle with cinnamon
- Makes 8 servings
