Easy Nut Butter Cookies Recipe

Ingredients

  • 2 eggs, lightly beaten
  • 1 tablespoon vanilla extract
  • 1/3 cup coconut sugar
  • 1 cup raw, natural unsalted peanut butter or almond butter (see note)
  • 1/3 cup almond flour
  • 1 teaspoon of your favorite spice, such as cinnamon, turmeric, allspice, or ginger (optional)

Method

  1. Preheat the oven to 350°F
  2. Line a baking sheet with parchment paper
  3. In a medium bowl, whisk together the eggs, vanilla extract, and sugar
  4. Fold in the nut butter and mix until smooth, then add the almond flour and spice (if using)
  5. Mix until it forms a sticky dough
  6. Spoon out a heaping tablespoon of the mixture, form a small ball, and place it on the baking sheet
  7. Gently press down on the dough using a fork to flatten the top and make a crisscross pattern
  8. Repeat with the remaining dough; you should have 15 cookies
  9. Bake in the oven for 15 to 17 minutes, or until the cookies are golden brown
  10. Let the cookies cool before removing them from the baking sheet
  11. Store the cookies in an airtight container or resealable plastic bag in the fridge for up to 1 week
