Easy Nut Butter Cookies Recipe
Ingredients

- 2 eggs, lightly beaten
- 1 tablespoon vanilla extract
- 1/3 cup coconut sugar
- 1 cup raw, natural unsalted peanut butter or almond butter (see note)
- 1/3 cup almond flour
- 1 teaspoon of your favorite spice, such as cinnamon, turmeric, allspice, or ginger (optional)
Method
- Preheat the oven to 350°F
- Line a baking sheet with parchment paper
- In a medium bowl, whisk together the eggs, vanilla extract, and sugar
- Fold in the nut butter and mix until smooth, then add the almond flour and spice (if using)
- Mix until it forms a sticky dough
- Spoon out a heaping tablespoon of the mixture, form a small ball, and place it on the baking sheet
- Gently press down on the dough using a fork to flatten the top and make a crisscross pattern
- Repeat with the remaining dough; you should have 15 cookies
- Bake in the oven for 15 to 17 minutes, or until the cookies are golden brown
- Let the cookies cool before removing them from the baking sheet
- Store the cookies in an airtight container or resealable plastic bag in the fridge for up to 1 week
