- 1 tablespoon olive oil
- 1 cup uncooked quinoa
- 5 cups chopped Swiss chard or spinach
- 2 zucchini, cut into 1/2-inch pieces
- 2 large carrots, peeled and chopped into 1/4-inch coins
- 2 celery stalks, chopped into 1/2-inch pieces
- 11/2 tablespoons minced garlic
- 1/2 medium red onion, chopped
- 2 teaspoons dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon dried sage
- 1 (14-ounce) can navy beans, rinsed and drained
- 6 cups no-salt-added vegetable stock
- 1 (14.5-ounce) can crushed tomatoes
- sea salt and black pepper
- garnish: chopped fresh basil
Method
- Combine all of the ingredients (except the garnish) in a slow cooker
- Cook on low for 6 to 8 hours or on high for 4 to 6 hours
- Garnish and enjoy this delicious soup as a complete meal
