Ingredients
- 700 ml low-salt beef broth
- 1 cup 100 g chopped celery
- 360 g no-salt-added diced tomatoes
- 280g frozen mixed vegetables
- 1 cup (160 g) chopped onion
- 1 cup (130 g) sliced carrots
- 1 tsp pepper
- 1½ pounds (680 g) lean ground beef
- ½ cup (63 g) flour
- ½ cup (60 ml) water
Method
- Combine all ingredients except flour and water in slow cooker
- Cover and cook on low for 8 hours
- One hour before serving time, turn to high
- Add flour to water and stir until smooth
- Pour into pot and stir
- Cook until thickened, about 1 hour
- Yield: 6 servings
- Per serving: 384 g water; 378 calories (48% from fat, 28% from protein, 24% from carb)
