Ingredients

  • 2 leeks
  • 12 large potatoes, peeled and cut into bite-size pieces
  • 320 g chopped onions
  • 1 cup (130 g) sliced carrot
  • ½ cup (50 g) diced celery
  • 320 g chopped onions
  • 2 L low-salt vegetable broth
  • ½ teaspoon black pepper
  • 1 tbsp (1.3 g) parsley
  • ¼ cup (55 g) unsalted butter
  • 370 ml evaporated milk

Method

  1. Put all ingredients except milk in slow cooker and cook on low for 10 to 12 hours or high for 3 to 4 hours
  2. Stir in milk when potatoes are tender and continue cooking for about 1 hour more
  3. Yield: 6 servings
  4. Per serving: 616 g water; 474 calories (26% from fat, 13% from protein, 60% from carb)
