Easy Crock Pot Roasted Lemon Chicken Slow Cooker Recipe
Ingredients
- 1 Whole Roasting Chicken
- 1 cup water
- 1/2 tsp kosher salt
- 1/4 tsp ground black pepper
- 1 whole lemon, sliced thinly
- 4 Tbsps. butter or ghee
- 2 tbsp chopped fresh parsley
Method
- Rinse the chicken thoroughly, removing the innards
- Pat dry then rub with salt and pepper
- Place the chicken in the middle of the crock pot then add water just to cover the bottom
- Cook for 3 hours on high and the internal temperature should reach 165oF or check whether the meat is no longer pink
- Add butter, parsley and lemon slices to the pot and let it stand for ten minutes
- Pour this mixture later on the chicken
