Easy Cornbread Slow Cooker Recipe

Ingredients

  • 1¼ cups (156 g) flour
  • ¾ cup (105 g) cornmeal
  • ¼ cup (50 g) sugar
  • 4 tsps (18.4 g) baking powder
  • ¼ cup (60 ml) egg substitute
  • 1 cup (120 ml) skim milk
  • 1/3 cup (80 ml) canola oil

Method

  1. Stir together flour, cornmeal, sugar, and baking powder
  2. Combine remaining ingredients
  3. Mix into dry ingredients until just moistened
  4. Pour into a greased 2-quart (1
  5. 9 L) mold
  6. Place on a rack (or on top of crumpled foil) in slow cooker
  7. Cook on high for 2 to 3 hours
  8. Yield: 6 servings
  9. Per serving: 51 g water; 338 calories (36% from fat, 8% from protein, 56% from carb)
