Ingredients
- 1¼ cups (156 g) flour
- ¾ cup (105 g) cornmeal
- ¼ cup (50 g) sugar
- 4 tsps (18.4 g) baking powder
- ¼ cup (60 ml) egg substitute
- 1 cup (120 ml) skim milk
- 1/3 cup (80 ml) canola oil
Method
- Stir together flour, cornmeal, sugar, and baking powder
- Combine remaining ingredients
- Mix into dry ingredients until just moistened
- Pour into a greased 2-quart (1
- 9 L) mold
- Place on a rack (or on top of crumpled foil) in slow cooker
- Cook on high for 2 to 3 hours
- Yield: 6 servings
- Per serving: 51 g water; 338 calories (36% from fat, 8% from protein, 56% from carb)
