Ingredients
- 3 large boneless skinless chicken breasts
- 1 celery stalk
- 1 onion, diced
- 1 clove garlic
- 16 oz. low sodium chicken broth
- 1/2 cup hot wing sauce
- 6 large lettuce leaves (Bibb or iceberg)
- 1 1/2 cups shredded carrots
- 2 large celery stalks, thinly sliced blue cheese, for serving
- ranch dressing, for serving
Method
- Place the chicken breasts, celery stalk, diced onion and garlic in a crock pot
- Pour the chicken broth over the ingredients into the crock pot
- Place lid, cover and leave for 8 hours on low or 4 hours on high
- Transfer the chicken breasts on to a platter
- Takeout about ½ cup broth from the crock pot and remove the balance broth
- Use a fork to shred the meat and place back again into the crock pot
- Add the kept aside broth, sauce and cook for another 30 minutes
- Serve the meat on lettuce wraps, topped up with the rest of the ingredients
- If required serve with ranch dressing
