Ingredients
- 1-1/2 cups graham cracker crumbs
- 1/3 cup packed brown sugar
- 1/3 cup butter, melted
- 1 can (14 ounces) sweetened condensed milk
- 3/4 cup cold, 2% milk
- 1 package (3.4 ounces) instant butterscotch pudding mix
- 3 packages (8 ounces each) cream cheese, softened
- 1 teaspoon vanilla extract
- 3 eggs, lightly beaten
Method
- Preheat oven to 325F
- In a small bowl, combine graham cracker crumbs, brown sugar and butter
- Press into the bottom of a 9 inch springform pan
- Bake for 10 minutes
- Meanwhile, in a separate bowl, whisk together both milks with pudding and let stand for 2 minutes
- In a large mixing bowl, beat cream cheese until smooth
- Add in pudding mixture and vanilla
- Add in eggs until just combined
- Pour into crust
- Place springform pan in a baking pan filled with 1 inch of water
- Bake for 65 to 75 minutes, until center is almost set
- Cool, cover and chill overnight
- Garnish suggestion – whipped topping and crushed butterscotch candies
