Tasty Carrot Lentils Soup Indian
Ingredients
- Serves: 8
- 1/2 cup lentils
- 2 lbs carrots, peeled and cut into 1-inch pieces
- 1/2 tsp harissa
- 1/4 cup maple syrup
- 1 cup orange juice
- 4 cups vegetable broth
- 1 tsp fresh ginger, grated
- 1/2 tbsp ground cumin
- 1/2 tbsp curry powder
- 1 medium onion, peeled and chopped
- pepper.

Method
- Add orange juice, broth, ginger, curry powder, onion, and carrots into the slow cooker and mix well.
- Cover and cook on low for 6 hours.
- Add lentils, harissa, and maple syrup.
- Stir well and cook on high for another 2 hours.
- Season with pepper and salt.
- Serve and enjoy.
