Dulce De Leche Caramel Cheesecake Recipe

Ingredients

Crust:

  • 28 Golden Oreo cookies, crushed
  • 1/4 cup butter, melted

Filling:

  • 3 (8 oz.) packages cream cheese, softened
  • 1 cup brown sugar, firmly packed
  • 1 tablespoon vanilla extract
  • 1 (13.4 oz.) can nestle la lechera dulce de leche caramel
  • 1 cup sour cream
  • 2/3 c p heavy whipping cream
  • 4 large eggs
  • 1/4 cup all-purpose flour

Topping:

  • 1/2 cup butter, softened
  • 1 cup brown sugar, packed
  • 1/4 cup heavy whipping cream
  • 2 cups powdered sugar

Method

  1. Preheat oven to 325F
  2. In a medium bowl, combine cookies and butter
  3. Press into the bottom and 1 inch up the sides of a 9 inch springform pan
  4. Freeze for 30 minutes
  5. In a large mixing bowl, beat together cream cheese, brown sugar and vanilla until smooth
  6. Mix in caramel, sour cream and heavy whipping cream
  7. Add eggs one at a time until just combined, then gradually add flour until thoroughly incorporated
  8. Pour into crust
  9. Place cake pan in a baking pan filled with 1 inch of water
  10. Bake for 90 minutes, until center is almost set
  11. Cool, cover and refrigerate overnight
  12. In a small saucepan, bring butter and brown sugar to a boil
  13. Reduce heat and continue to cook for 2 minutes, stirring continuously
  14. Stir in milk and return to a boil
  15. Remove from heat and cool to lukewarm
  16. Place pan in a bowl of cold water
  17. Whisk in powdered sugar until a frosting consistency is formed
  18. Spread over cheesecake and chill for 1 hour
  19. Garnish suggestion – caramel drizzle and whipped topping
