Double Apricot Glazed Ham Recipe

Ingredients

  • 1 cup dried apricots (6 oz)
  • 1 cup chicken broth or natural goodness- chicken broth
  • 1?2 cup firmly packed brown sugar
  • 6 – 8 lb fully cooked whole boneless ham
  • 2 tbsp butter or margarine
  • 1?2 cup finely chopped shallots
  • 2 jars (12 oz each) apricot preserves (about 2 cups)
  • 1?4 cup dijon mustard
  • 2 tsp grated orange rind

Method

  1. Place apricots and broth in microwave-safe measuring cup
  2. Microwave on high for 2 min
  3. Let cool
  4. Remove apricots and cut into strips
  5. Reserve broth
  6. Mix apricots, sugar and 1?4 cup reserved broth
  7. Place ham in roasting pan
  8. Bake at 325°f for 2 hr or until thermometer registers 140°f
  9. Allow 15 min per pound
  10. Top with apricot mixture during last 30 min of baking, basting frequently with pan drippings
  11. Heat butter in skillet
  12. Add shallots and cook until tender
  13. Add apricot preserves, mustard, orange rind and remaining broth
  14. Heat to a boil
  15. Cook over low heat 10 min or until slightly thickened
  16. Slice ham and serve with apricot sauce

serves 24 to 32 to 3 1?2-lb fully cooked half boneless ham for 12 servings

  1. Prepare as above, but reduce remaining ingredients in half
