Dijon Vinaigrette Recipe
Ingredients
Makes about 1 1/4 cups
- 1/4 cup white wine vinegar
- 2 tablespoons Dijon mustard
- 1 garlic clove
- 1 medium shallot
- 1/2 teaspoon dried basil or marjoram
- 1 tablespoon chopped fresh parsley
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- ¾ cup olive oil
Method
- In a blender or food processor, puree the vinegar, mustard, garlic, shallot, basil, parsley, salt and pepper
- Stream in the oil and blend until smooth
- Store leftover dressing tightly covered in the refrigerator, where it will keep for 3 to 4 days
