Dijon Vinaigrette Recipe

Ingredients

Makes about 1 1/4 cups

  • 1/4 cup white wine vinegar
  • 2 tablespoons Dijon mustard
  • 1 garlic clove
  • 1 medium shallot
  • 1/2 teaspoon dried basil or marjoram
  • 1 tablespoon chopped fresh parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • ¾ cup olive oil

Method

  1. In a blender or food processor, puree the vinegar, mustard, garlic, shallot, basil, parsley, salt and pepper
  2. Stream in the oil and blend until smooth
  3. Store leftover dressing tightly covered in the refrigerator, where it will keep for 3 to 4 days
