Ingredients
- Serves: 6
- 1 sweet potato, diced
- 1 courgette, diced
- 1/4 cup cashew nuts
- 14 oz can tomatoes, chopped
- 1 tsp curry powder
- 1/2 tsp chili powder
- 1/2 tsp black pepper
- 2 tbsp tomato puree
- 4 tbsp flour
- 14 oz can coconut milk
- 1 tsp garlic, minced
- 2 onions, diced
- 4 tomatoes, diced
- 1 tsp ginger, minced
- 2 tsp garam masala
- 1 tbsp vegetable oil
Method
- Heat oil in the pan over medium heat.
- Add ginger, onion, and garlic to the pan and saute for 5 minutes.
- Add tomato paste, flour, and spices and cook for a minute.
- Add coconut milk and stir well and cook until thickened.
- Transfer pan mixture into the slow cooker along with remaining ingredients and mix well.
- Cover and cook on low for 6 hours.
- Serve and enjoy.
