Ingredients
Makes 4 to 6 servings
- 3 cups apple juice or white grape juice
- 2 cups couscous
- 1/2 teaspoon ground cinnamon
- salt
- 1/2 cup sweetened dried cranberries or other dried fruit
- 1/3 cup chopped walnuts or toasted slivered almonds
- 1 tablespoon ground flax seed
Method
- In a large saucepan, bring the apple juice to a boil over high heat
- Add the couscous, cinnamon and salt to taste
- Stir in the cranberries, cover and turn off the heat
- Let the couscous stand for 10 minutes
- Stir in the walnuts, sprinkle with the flax seeds and serve hot
