Daybreak Couscous Recipe

Ingredients

Makes 4 to 6 servings

  • 3 cups apple juice or white grape juice
  • 2 cups couscous
  • 1/2 teaspoon ground cinnamon
  • salt
  • 1/2 cup sweetened dried cranberries or other dried fruit
  • 1/3 cup chopped walnuts or toasted slivered almonds
  • 1 tablespoon ground flax seed

Method

  1. In a large saucepan, bring the apple juice to a boil over high heat
  2. Add the couscous, cinnamon and salt to taste
  3. Stir in the cranberries, cover and turn off the heat
  4. Let the couscous stand for 10 minutes
  5. Stir in the walnuts, sprinkle with the flax seeds and serve hot
