Dahi Vada Indian Recipe

Ingredients

DRY INGREDIENTS:

  • 1/2 cup whole-wheat flour or pastry flour or unbleached white flour, plus more for dusting
  • 1/2 cup unbleached white flour or allpurpose flour
  • 1/4 cup fine semolina flour (see note)
  • 1/4 cup oat flour
  • 1/2 teaspoon salt
  • 1/2 to 3/4 teaspoon carom seeds, toasted cumin seeds, or fennel seeds
  • 1/4 teaspoon freshly ground black pepper
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda

WET INGREDIENTS:

  • 1/2 scant cup chilled nondairy milk
  • 2 tablespoons melted vegan butter or safflower oil
  • 1 tablespoon nondairy yogurt
  • 1 teaspoon lemon juice
  • 1 teaspoon apple cider vinegar or other mild vinegar

Method

  1. Preheat the oven to 425°F
  2. Line a baking sheet with parchment paper
  3. In a bowl, add all the dry ingredients
  4. Whisk well to combine
  5. In another bowl, mix all the wet ingredients
  6. The milk will curdle
  7. Add the wet ingredients into the dry ingredients, using a spoon to mix until a dough starts to form
  8. Using greased or floured hands, bring the dough together with a few strokes
  9. The dough might be slightly sticky, depending on the flour used
  10. Add 1 tablespoon or more of flour if the dough is too sticky to handle
  11. Do not overwork the dough
  12. Place the dough on parchment paper
  13. Pat it down into a 1/2-to 3/4-inch thick square
  14. Dust lightly with flour if necessary
  15. Use a 1 1/2-to 2-inch cookie cutter to cut circles
  16. Place the biscuits on a parchment-lined baking sheet
  17. Spray or brush lightly with water, then spray or brush with oil or melted vegan butter
  18. Bake for 13 to 14 minutes or until golden on top
  19. Do not overbake
  20. Cool for a minute before serving
