Curried Mung Beans Indian Recipe

2 teaspoons coconut or safflower oil
1 teaspoon cumin seeds
4 cloves garlic, chopped
1 (1-inch) knob of ginger, chopped
1 tablespoon ground coriander
1 teaspoon Garam Masala
1/2 to 3/4 teaspoon cayenne
1/2 teaspoon ground turmeric
1 1/2 cups chopped tomatoes
1 cup whole green mung beans, soaked for an hour or overnight 4 cups water
1 to 1 1/2 teaspoons salt
1 cup coconut milk
1/4 cup chopped cilantro, for garnish
1 teaspoon lemon juice, for garnish
Method
Heat the oil in a large skillet over medium heat
When the oil is hot, add the cumin seeds
Cook until the seeds change color, about 1 minute
Blend the garlic, ginger, coriander, garam masala, cayenne, and turmeric with 2 tablespoons of water.
Add the blended mixture to the skillet.
Cook until fragrant, about 2 minutes.
Puree the tomatoes in the same blender, then add the tomato puree to the skillet.
Cook for 5 minutes.
Add the mung beans to the skillet
Add the 4 cups of water
Mix well, cover, and bring to a boil
Cook for 6 to 8 minutes
Reduce heat to low-medium and cook until the mung beans are tender, 30 to 40 minutes, stirring once about halfway through.
Add the salt and coconut milk
Mix well, cover, and cook for 10 minutes
Taste, and adjust salt and spice
Cook uncovered for a few minutes until desired consistency is reached (optional)
Garnish with cilantro and lemon juice
Variation: Add chopped veggies or greens at Step 2, with the mung beans
Pressure Cooker: Follow Step 1 in the pressure cooker
Add the drained mung beans, water, salt, and coconut milk to the pressure cooker
Close and lock the lid
Cook for 15 to 20 minutes for unsoaked beans and 10 minutes if the beans were soaked
Let the pressure release naturally
Garnish and serve
