Crustless Crab Quiche Slow Cooker Recipe

Ingredients

Serves 4

Active Time 15 minutes

Pressure/Manual (High) Natural/Quick Release

  • vegetable oil
  • 4 large eggs
  • 1 cup half-and-half or heavy cream
  • 1 cup shredded Swiss cheese
  • 1 cup chopped scallions
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon herbes de Provence
  • ½ to 1 teaspoon salt
  • 8 ounces imitation crabmeat, real crabmeat, or a mix of crabmeat and chopped raw shrimp (about 2 cups)
  • 2 cups water

Method

  1. Generously grease a 6- or 7-inch nonstick springform pan with vegetable oil
  2. Set the pan on a sheet of aluminum foil that is larger than the pan and crimp the foil around the bottom of the pan
  3. This helps prevent the pan from leaking, as springform pans tend to do
  4. In a large bowl, whisk together the eggs and half-and-half
  5. Add the cheese, scallions, pepper, paprika, herbes de Provence, and salt
  6. Stir with a fork to combine
  7. Add the imitation crabmeat and stir to combine
  8. Pour the egg mixture into the prepared pan
  9. Cover the pan loosely with foil
  10. Pour the water into the Instant Pot
  11. Set a steamer rack in the pot
  12. Place the pan on the steamer rack
  13. Secure the lid on the pot
  14. Close the pressure-release valve
  15. Select MANUAL and set the pot at HIGH pressure for 25 minutes
  16. At the end of the cooking time, allow the pot to sit undisturbed for 10 minutes, then release any remaining pressure
  17. Using silicone oven mitts, very carefully remove the pan from the pot
  18. Using a knife, loosen the sides of the quiche from the pan, then remove the springform ring
  19. Serve warm or at room temperature
