Ingredients
Makes 4 servings
- 1/4 cup tahini (sesame paste)
- 2 tablespoons rice vinegar
- 1 tablespoon soy sauce
- 1 tablespoon toasted sesame oil
- 1/2 teaspoon sugar
- salt and freshly ground black pepper
- 3 cups shredded green cabbage
- 1 medium carrot, shredded
- 12 snow peas, trimmed and cut diagonally into thin matchsticks
- 2 green onions, minced
- 2 tablespoons toasted sesame seeds, for garnish
- 1 cup crispy chow mein noodles (optional)
Method
- In a small bowl, combine the tahini, vinegar, soy sauce, sesame oil, sugar and salt and pepper to taste
- Stir well to blend and set aside
- In a large bowl, combine the cabbage, carrot, snow peas and green onions
- Pour the dressing over the vegetables and toss gently to coat
- Taste, adjusting seasonings if necessary
- Sprinkle with toasted sesame seeds and chow mein noodles, if using
- Refrigerate, covered, until ready to serve
