Crumbed Cod Seafood Recipe

Ingredients

  • 1 pound cod fillets — thawed if necessary
  • melted butter or margarine
  • 1/4 cup fine dry bread crumbs
  • 1 tablespoon chopped parsley
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/8 teaspoon paprika
  • lemon wedges

Method

  1. Microwave Directions: Cut cod into serving sized pieces
  2. Coat on all sides in about 3 tbsp melted butter
  3. Place in microwave proof dish
  4. Combine bread crumbs, parsley, seasonings and 1 tbsp melted butter Sprinkle crumb mixture over cod
  5. Cover with plastic wrap; microwave at medium 3 minutes
  6. Rotate dish 1/4 turn; microwave at medium 2 to 4 minutes longer or until cod flakes easily when tested with a fork
  7. Serve with lemon wedges
  8. Oven Directions: Cut cod into serving-size pieces
  9. Coat on all sides in about 3 tbsp melted butter
  10. Place in baking dish
  11. Combine bread crumbs, parsley, seasonings and 1 tbsp melted butter
  12. Sprinkle crumb mixture over cod
  13. Bake at 450 F 8 to 10 minutes or until cod flakes easily when tested with a fork
  14. Serve with lemon wedges
