Ingredients
- 1 pound cod fillets — thawed if necessary
- melted butter or margarine
- 1/4 cup fine dry bread crumbs
- 1 tablespoon chopped parsley
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 1/8 teaspoon paprika
- lemon wedges
Method
- Microwave Directions: Cut cod into serving sized pieces
- Coat on all sides in about 3 tbsp melted butter
- Place in microwave proof dish
- Combine bread crumbs, parsley, seasonings and 1 tbsp melted butter Sprinkle crumb mixture over cod
- Cover with plastic wrap; microwave at medium 3 minutes
- Rotate dish 1/4 turn; microwave at medium 2 to 4 minutes longer or until cod flakes easily when tested with a fork
- Serve with lemon wedges
- Oven Directions: Cut cod into serving-size pieces
- Coat on all sides in about 3 tbsp melted butter
- Place in baking dish
- Combine bread crumbs, parsley, seasonings and 1 tbsp melted butter
- Sprinkle crumb mixture over cod
- Bake at 450 F 8 to 10 minutes or until cod flakes easily when tested with a fork
- Serve with lemon wedges
