Ingredients
- 1 pound cod fillets — thawed if necessary
- melted butter or margarine.
- 1/4 cup fine dry bread crumbs
- 1 tablespoon chopped parsley
- 1/8 teaspoon salt
- 1/8 teaspoon freshly-ground black pepper
- 1/8 teaspoon paprika
- lemon wedges.
Method
- Cut cod into serving-size pieces
- Coat on all sides in about 3 tablespoon melted butter
- Place in baking dish
- Combine bread crumbs, parsley, seasonings and 1 tablespoon melted butter
- Sprinkle crumb mixture over cod
- Bake at 450 degrees 8 to 10 minutes or until cod flakes easily when tested with a fork
- Serve with lemon wedges
- This recipe yields 4 servings
- Recipe may be halved
