Simple Taco Soup Slow Cooker
Ingredients
- 1 pound (455 g) extra-lean ground beef
- 1 cup (160 g) chopped onion
- 1 cup (150 g) chopped green bell pepper
- 2 tbsps (15 g) salt-free mexican seasoning
- 4 cups (950 ml) low-salt vegetable juice
- 1 cup (260 g) low-salt salsa
Method
- Brown meat in skillet over medium-high heat
- Drain
- Combine meat and remaining ingredients in slow cooker
- Cover and cook on low 8-10 hours
- Yield: 6 servings
- Per serving: 285 g water; 235 calories (50% from fat, 27% from protein, 23% from carb)
Serve with your choice of traditional taco toppings, such as lettuce, tomato, shredded cheese, sour cream, etc
