Crock Pot Walnut Chicken Slow Cooker Recipe
Ingredients
- 1 tbsp olive oil, divided onions, chopped
- 1/3 cup pomegranate molasses
- 1/2 cup chicken stock tbsp lemon juice
- ½ tsp cinnamon tsp turmeric
- 1 tbsp brown sugar
- 1 tsp kosher salt
- ½ tsp ground pepper bone-in, skin-on chicken thighs
- 4 whole peeled garlic cloves
- 4 stems of fresh rosemary
- 2 carrots, chopped into 1 pieces
- 1 cup pomegranate seeds
- ½ cup chopped parsley
Method
- Blitz the toasted walnuts in a food processor until coarse
- Saute onions in a pan of olive oil and add the toasted walnuts and cook for another 2 minutes
- Add the pomegranate molasses, chicken stock and lemon juice and mix well and pour into a bowl
- Combine turmeric, cinnamon, brown sugar, salt and pepper and coat each piece of the chicken with the spices
- Brown the chicken on both sides with some olive oil in the pan
- Place the chicken in a crock pot and put the onions and walnut gravy over it
- Throw in the garlic cloves and the rosemary stems
- Until the gravy begins to bubble, the crock pot should be on high, after that reduce to low and cook for 3 hours
- Add the carrots and cook for another 1 ½ hour
- Garnish topped with parsley and pomegranate seeds
