Ingredients
- 4 – 6 boneless chicken breasts
- 1 tbsp olive oil or fat of choice
- ½ onion, diced
- ½ red pepper, cut into thin strips
- 2 pepperoncini peppers, cut into thin strips
- 6 oz. fresh spinach
- 2 tsp minced garlic
- 1 ½ tsp fresh oregano or ½ tsp dried oregano
- salt and pepper
- squeeze juice of lemon
- 1 cup chicken stock
- ½ cup white
- 1/3 cup feta cheese fresh parsley, fresh oregano, or fresh mint
- squeeze of fresh lemon(optional)
Method
- Create a deep pocket on each chicken breast buy cutting a deep slit in the middle
- Coat the chicken with salt and pepper on all side then set aside
- Cook pepper and onion in olive oil over medium heat in a skillet for a minute or until onion are no longer raw
- Add in your spinach and garlic and cook until the spinach is wilted
- Remove skillet from heat
- Stuff a tsp of feta into the pockets of the chicken then add spinach mixture on each pocket as well
- Put these stuffed chicken breasts to the crock pot and sprinkle lemon juice on the chicken
- Pour chicken stock and wine to the crock pot then cover
- Cook for 6-8 hours on low
- Top with parsley, fresh mint, fresh oregano and squeeze of lemon
