Ingredients
- 2 plump chicken breasts, thawed
- 1 cup shredded carrots
- 1 cup shredded zucchini
- 2 cloves garlic, finely minced
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 1 tsp crumbled dried sage
Method
For the stuffing, mix all the ingredients other than the chicken in a bowl
- Cut the chicken breasts up to the middle to make a pocket
- Scoop the stuffing into the chicken pockets and secure the ends with toothpicks
- Place the chicken in the crock pot
- Cook for 4 hours on low until the chicken is ready
