Ingredients
- 1.5 lbs. of boneless skinless chicken breasts
- 2 cloves garlic
- 1 8oz can of artichoke heart quarters in brine
- ¼ cup chicken stock
- juice of one lemon.
- 2 Tbsps. of pickled jalapenos diced ? cup plain Greek yogurt
- ¼ cup parmesan
- 2 cups shredded mozzarella
- 1 package frozen cream spinach thawed
Method
- Into a crock pot, add the artichoke hearts and brine, chicken, stock and garlic
- Cook; 7 ½ to 8 hours on a low heat setting or 4 ½ to 5 hours on a high heat setting minutes before serving time, turn the heat to a high setting and add the remaining ingredients to the cooker; stir
- Serve with pasta or rice
