Ingredients
- 1 1/2 lbs. boneless skinless chicken breasts
- 1 medium yellow onion, diced
- 1 bell pepper, thinly sliced
- 1 jalapeno, diced
- 2 cloves garlic, minced
- 1 15-oz. can diced tomatoes
- 2 cups chicken stock
- 1 tbsp chili powder
- 1 tbsp cumin
- 1 tsp dried oregano
- 1/2 tsp paprika
- salt and freshly ground pepper, to taste
- 2 tbsp fresh cilantro, chopped
- 1 avocado, pitted and sliced
Method
- Insert the chicken breasts into the bottom of a crock pot
- Place the diced onion, sliced pepper and jalapeno and the minced garlic on top of the meat
- Add the diced tomatoes and the 2 cups of chicken stock into the crock pot
- Sprinkle the spices and adjust seasonings with salt and pepper
- Place lid, cover and allow the ingredients to cook for about 8 hours on low
- Once the chicken is tender shred the meat using a fork
- Serve with avocado and cilantro
