Ingredients
- 1.5 lbs. boneless, skinless chicken thighs
- 1.5 lbs. bone-in, skinless chicken breasts
- 1/4 cup fresh lime juice
- 4 garlic cloves
- 2 tbsp fresh thyme
- 1 tbsp minced fresh ginger
- 1 tbsp dark brown sugar
- 2 tsp allspice berries
- 4 scallions
- 3-4 habanero peppers, seeded 1.5 tsp salt
- 2 tbsp white vinegar
- 1 red pepper
- salt and pepper
Method
- Place all the ingredients excluding the chicken into a blender
- Place the chicken into the crock pot and pour the mixture over the chicken
- Leave for about 6 hours, shred the chicken parts into pieces using forks
