Ingredients
- bone-in chicken legs
- ¾ tsp kosher salt, divided
- ½ tsp freshly ground pepper, divided
- 1 tsp canola oil, preferably organic, divided
- 2 cloves garlic, finely chopped
- 2 large onions, sliced ½ tsp dry Italian Seasoning
- ½ cup dry red wine
- 28-oz can diced tomatoes
- 1/3 cup chopped green olives
- 2 bell peppers any color, or 4 cubanelle peppers, cored and sliced
- 3 cups fresh or frozen sliced okra
- ½ cup chopped flat leaf parsley
Method
- Season the chicken pieces with salt and pepper
- Brown the chicken in a skillet with olive oil over medium flame and transfer the chicken to the insert of the crock pot
- Saute the garlic, onions, Italian seasoning, some salt and pepper for around 2 minutes and pour into the crock pot
- Pour the wine in the skillet and bring to a simmer continuously stirring
- Add the tomato and olives and bring to simmer on high flame and transfer to the crock pot
- Add the peppers to the crock pot and cook on low for 8 hours
- Just prior to the last 30 minutes of cooking, layer the okra on top and cook covered for the next 30 minutes
