Crock Pot Okra Chicken Slow Cooker Recipe

Ingredients

  • bone-in chicken legs
  • ¾ tsp kosher salt, divided
  • ½ tsp freshly ground pepper, divided
  • 1 tsp canola oil, preferably organic, divided
  • 2 cloves garlic, finely chopped
  • 2 large onions, sliced ½ tsp dry Italian Seasoning
  • ½ cup dry red wine
  • 28-oz can diced tomatoes
  • 1/3 cup chopped green olives
  • 2 bell peppers any color, or 4 cubanelle peppers, cored and sliced
  • 3 cups fresh or frozen sliced okra
  • ½ cup chopped flat leaf parsley

Method

  1. Season the chicken pieces with salt and pepper
  2. Brown the chicken in a skillet with olive oil over medium flame and transfer the chicken to the insert of the crock pot
  3. Saute the garlic, onions, Italian seasoning, some salt and pepper for around 2 minutes and pour into the crock pot
  4. Pour the wine in the skillet and bring to a simmer continuously stirring
  5. Add the tomato and olives and bring to simmer on high flame and transfer to the crock pot
  6. Add the peppers to the crock pot and cook on low for 8 hours
  7. Just prior to the last 30 minutes of cooking, layer the okra on top and cook covered for the next 30 minutes
