Crock Pot Mexican Chicken Chowder Slow Cooker Recipe

Ingredients

  • 1 can Cream of Chicken soup
  • 1 can of yellow corn
  • 1 lb boneless, skinless chicken breast
  • 1 can 4oz Fritos Jalapeno & Cheddar Cheese dip
  • 1 can fat-free chicken broth
  • 1/2 cup canned green chilies
  • 1 cup light sour cream

Method

  1. In a crock pot, combine the cream of chicken, corn, broth, green chilies and juice and cook over a low heat
  2. Add the chopped chicken to the pot
  3. Cook for 3 ½ to 4 hours
  4. When done, mix 1 cup of the crock pot mixture, sour cream and cheese dip in a separate bowl
  5. Add the sour cream mix to the pot and cook for 12 to 15 minutes
