Ingredients
- 12 pepperoncini peppers, rinsed and drained
- 1 cup sliced pitted kalamata olives 8 cloves minced garlic
- 3 1/2 lbs. chicken leg quarters
- 1 1/2 tsp paprika
- 1/4 tsp salt
- 1/4 tsp fresh ground black pepper
- 1/2 tsp grated lemon zest
- 1/2 cup fresh-squeezed lemon juice
- 1 cup sour cream
- 1/2 tsp paprika
Method
- Place the pepperoncini in a crock pot
- Toss in olives and garlic on top
- Rinse and pat dry the meat and insert into the crock pot over the other ingredients
- Add the seasonings, ½ tsp paprika, lemon zest and the lemon juice
- Cover with lid and cook for 6 hours on low until the meat is fork tender
- Transfer the cooked chicken onto a plate and leave aside
- Turn the cooker onto high and remove the excess fat seen on the surface of the liquid
- Add the sour cream and allow to simmer for about 10 minutes
- Mix in the paprika and pepper
