Ingredients
For the chicken:
- 6 chicken thighs
- 1 tbsp Chinese Five Spice Powder
- 1/2 tsp kosher salt
For the sauce:
- 1 cup no sugar added mandarin orange slices
- 1 tsp minced garlic
- 1 tbsp minced ginger
- 1/2 tsp sliced red chilis or red
- pepper flakes
- 1 tbsp lime juice 1 tbsp granulated sugar substitute 1 tsp sesame oil
- 2 tbsp fish sauce
Method
- Season the chicken pieces with the salt and five spice powder
- Place the pieces with skin side down on a heated skillet and allow to brown for about 3-4 minutes
- Flip over the pieces and leave for another 3-4 minutes
- Insert the browned pieces into the crock pot, with skin side facing upwards
- Mix all other ingredients except for the gum in a bowl
- Pour over the meat and cook for 4 hours on High or 6 hours on low
- Transfer the cooked chicken pieces into a platter
- Place the balance sauce into a blender, toss in ½ tsp gum and process for 20-25 seconds
- Pour over the cooked chicken pieces and garnish with cilantro if required
