Ingredients
- 2 large carrots, peeled and chopped
- 1/2 cup chopped yellow onion
- 2 lbs bone-in, skin-on chicken thighs
- 4 cloves garlic, minced
- 1/4 tsp salt
- black pepper to taste
- 1/2 tbsp ground sage
- 1/2 tbsp rosemary
- juice of one lemon
- 1 tbsp extra virgin olive oil
Method
- Place a layer of onions and carrots in the crock pot and place the chicken thighs with the skin side facing on top over the onions and carrots
- Add garlic, herbs and seasonings
- Squeeze the lemon juice and drizzle with olive oil
- Cook for 7 hours on low
