Ingredients
- 2 Tbsps. finely shredded lemon peel 1 tbsp ground sage
- 1/2 tsp seasoned salt
- 1/2 tsp freshly ground black pepper
- 8 small whole chicken legs (drumstick and thigh), skinned (about 5 lbs)
- 1/4 cup olive oil
- 4 cups quartered or sliced fresh
- cremini, shiitake, and/or button
- mushrooms
- 2 cloves garlic, thinly sliced
- 8 cups sourdough baguette cut into 1-inch pieces
- 1 cup coarsely shredded carrot
- 1 cup reduced-sodium chicken broth
- 1/4 cup chopped walnuts, toasted
- 1/4 cup snipped flat leaf Italian
- parsley
Method
- Use the spray oil, and grease the inner pot of a 6 quart cooker
- Keep 1 tsp of lemon peel, add the rest to a bowl along with the sage, and seasoning
- Smear ¾ of the mix onto the chicken pieces, and place in the cooker
- In a large frying pan, warm the oil, and fry the mushrooms, and garlic for 4mins
- Then add the sage mix, and blend well
- In a larger bowl, add the bread, and carrots, stir and put the mushrooms in
- Mix again, along with the broth, put the mix over the chicken
- Place the lid on and switch to high, cook for 4hrs
- Once cooked remove the chicken and stuffing, from the cooker to a platter
- You do not need the stock in the cooker
- Blend the remaining lemon peel, with walnuts, and parsley
- Put over the chicken
