Crock Pot Lemon Chicken With Stuffing Slow Cooker Recipe

Ingredients

  • 2 Tbsps. finely shredded lemon peel 1 tbsp ground sage
  • 1/2 tsp seasoned salt
  • 1/2 tsp freshly ground black pepper
  • 8 small whole chicken legs (drumstick and thigh), skinned (about 5 lbs)
  • 1/4 cup olive oil
  • 4 cups quartered or sliced fresh
  • cremini, shiitake, and/or button
  • mushrooms
  • 2 cloves garlic, thinly sliced
  • 8 cups sourdough baguette cut into 1-inch pieces
  • 1 cup coarsely shredded carrot
  • 1 cup reduced-sodium chicken broth
  • 1/4 cup chopped walnuts, toasted
  • 1/4 cup snipped flat leaf Italian
  • parsley

Method

  1. Use the spray oil, and grease the inner pot of a 6 quart cooker
  2. Keep 1 tsp of lemon peel, add the rest to a bowl along with the sage, and seasoning
  3. Smear ¾ of the mix onto the chicken pieces, and place in the cooker
  4. In a large frying pan, warm the oil, and fry the mushrooms, and garlic for 4mins
  5. Then add the sage mix, and blend well
  6. In a larger bowl, add the bread, and carrots, stir and put the mushrooms in
  7. Mix again, along with the broth, put the mix over the chicken
  8. Place the lid on and switch to high, cook for 4hrs
  9. Once cooked remove the chicken and stuffing, from the cooker to a platter
  10. You do not need the stock in the cooker
  11. Blend the remaining lemon peel, with walnuts, and parsley
  12. Put over the chicken
