Ingredients
- 1.5 lbs. boneless, skinless chicken thighs
- 1 (13.5 oz.) can coconut milk
- 1 tbsp agave nectar
- 1 tbsp red chili paste
- 1 tbsp curry powder
- 1 tsp fish sauce
- 3-4 cloves garlic, diced
- 1-inch knob of ginger, diced
- 1 onion, sliced
- 1 green pepper, diced
- 2-3 sweet potatoes, diced
Method
- Combine the coconut milk, curry powder, fish sauce, ginger, agave and red chili paste in a crock pot
- Add the chicken and toss it in the sauce
- Add the veggies on top
- Cook for 7-8 hours on low
