Crock Pot Curry Coconut Chicken Slow Cooker Recipe

Ingredients

  • 1 to 1.5 lbs. of boneless chicken breast, diced
  • 2 cans of coconut milk
  • 3 tbsp red curry paste
  • 1 small yellow onion, diced
  • 1/2 medium red bell pepper, chopped
  • 1/2 medium green bell pepper, chopped
  • 1/4 head of cauliflower, chopped
  • 1/4 head of cabbage, chopped
  • 3 cloves of garlic, minced

Method

  1. Put the chicken broth and the coconut milk into the crock pot set on low
  2. Add the curry paste and stir until it dissolves
  3. Add the chicken, onions and bell peppers and stir
  4. Add the cauliflower florets, cabbage and the garlic to the crock pot
  5. Cook covered for 4 hours
