Ingredients
- 1 to 1.5 lbs. of boneless chicken breast, diced
- 2 cans of coconut milk
- 3 tbsp red curry paste
- 1 small yellow onion, diced
- 1/2 medium red bell pepper, chopped
- 1/2 medium green bell pepper, chopped
- 1/4 head of cauliflower, chopped
- 1/4 head of cabbage, chopped
- 3 cloves of garlic, minced
Method
- Put the chicken broth and the coconut milk into the crock pot set on low
- Add the curry paste and stir until it dissolves
- Add the chicken, onions and bell peppers and stir
- Add the cauliflower florets, cabbage and the garlic to the crock pot
- Cook covered for 4 hours
