Ingredients
- 1 to 1.5 lbs. of boneless chicken thighs, cut into cubes
- 1 or 2 cans of coconut milk
- 3 tbsp Paleo friendly Thai Kitchen Curry paste
- 1 small yellow onion
- 1 medium red bell pepper, cubes
- 1 medium green bell pepper, cubes
- 1/2 head of cabbage
Method
- Pour the coconut milk and the curry paste into the crock pot
- Mix until the curry paste dissolves
- Put the chicken cubes and bell peppers in the crock pot and stir
- Chop the onions and add to the chicken
- Cut the cabbage into long strips and put into the cooker and stir
- Cook covered for 4 hours
