Crock Pot Curry Chicken With Peppers Slow Cooker Recipe

Ingredients

  • 1 to 1.5 lbs. of boneless chicken thighs, cut into cubes
  • 1 or 2 cans of coconut milk
  • 3 tbsp Paleo friendly Thai Kitchen Curry paste
  • 1 small yellow onion
  • 1 medium red bell pepper, cubes
  • 1 medium green bell pepper, cubes
  • 1/2 head of cabbage

Method

  1. Pour the coconut milk and the curry paste into the crock pot
  2. Mix until the curry paste dissolves
  3. Put the chicken cubes and bell peppers in the crock pot and stir
  4. Chop the onions and add to the chicken
  5. Cut the cabbage into long strips and put into the cooker and stir
  6. Cook covered for 4 hours
