Ingredients
- 1 lb. of white ground chicken
- 1 lb. of tomatillos, chopped into a very large dice
- 1 small to medium butternut squash, peeled and cut into a small dice
- 2 small cans of diced green chiles
- 2 medium green chile peppers such as serranos
- 1 medium white onion, cut into a large dice
- 1 tbsp coconut oil
- 2 tsp cayenne pepper
- 1 tsp paprika
- 1 tsp garlic powder
Method
- Add the coconut oil and spices to a pan on medium flame
- Add the diced butternut squash along with the ground meat to the pan, turning occasionally until the meat is browned and squash is tender
- Add the onion and chiles to the pan and mix
- Remove the pan and place aside
- Layer the crock pot with the tomatillos and chiles
- Pour the skillet mixture into the crock pot on top of the tomatillos
- Cook for 4 hours on low
