Ingredients
- 1 lb. chicken
- 1 can tomatoes
- 1 cup enchilada sauce
- 1 medium onion, chopped
- 1/2-1 cup green chiles from can
- 2 cloves garlic
- 32 oz of chicken broth, natural or low sodium are good choices
- 1 tsp cumin
- 1tsp chili powder
- 1 tsp salt
- 1/4 tsp pepper
- 1 bay leaf
- 2 cup frozen corn
- 2 tbsp fresh chopped cilantro
Method
- Place the chicken, tomatoes, enchilada sauce, onion, green chilies, garlic, chicken broth, cumin, chili powder, salt, pepper, bay lead and frozen corn in a crock pot
- Cook; 8 to 8 ½ hours on a high heat setting or3 to 3 ½ hours on a high heat setting
- Shred the chicken an hour before serving
- Immediately before serving add the cilantro and stir it in
- You can use cheese, sour cream, tortilla strips or green onions to top the soup
