Ingredients
- 2 tbsp olive oil
- 6 chicken thighs boneless, skinless, cut into 1 pieces?
- 1 yellow onion diced
- 2 tsp garlic minced
- 2 tsp coarse salt
- 1 1/2 tbsp garam masala
- 1/2 tsp paprika
- 3 tbsp tomato paste
- 28 oz. canned diced tomatoes
- 15 oz. coconut milk
- cilantro to garnish.
Method
- Brown the chicken breasts in oil in a pan and then transfer it to the crock pot
- Saute onion in the pan and then add garlic, salt, paprika and garam masala and saute
- Put the tomato paste in the pan and cook for a minute after which add the tomatoes and simmer
- Pour the entire tomato sauce and the coconut milk into the crock pot over the chicken
- Cook covered for 4 hours on high or 6-8 hours on low
- During the last 30 minutes of cooking uncover the cooker and allow the sauce to thicken slightly
- Garnish with cilantro
