Ingredients
- ½ cup chopped carrots
- 1 cup skim milk
- 1 cup low sodium chicken broth
- 1/8 tsp white pepper
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 potato, peeled and cubed
- ½ lb. boneless, skinless chicken breasts, cut into 1 pieces
- 2, 15 oz. cans creamed corn
- ¼ cup dried potato flakes
- ½ cup grated Parmesan cheese
Method
- Keep the dried potato flakes and cheese on one side
- Add the remaining ingredients to the crock pot
- Cook on low for 6hrs, when the chicken and potatoes are soft it’s ready
- Put in the potato flakes and cheese
- Mix well, and serve
