Ingredients
- 220 g cranberries
- ½ cup (60 g) chopped walnuts
- 250 g flour
- 1 cup (200 g) sugar
- 1½ teaspoons baking powder
- ½ teaspoon baking soda
- 6 tbsps (85 g) unsalted butter
- ¼ cup (60 ml) egg substitute
- 1 tbsp (6 g) grated orange peel
- ½ cup (120 ml) orange juice
Method
- Spray a 2-quart (1
- 9 L) mold or coffee can with nonstick baking spray (one that contains flour)
- Preheat cooker on high
- Grind cranberries and walnuts with coarse blade of food processor
- In large mixing bowl, combine flour, sugar, baking powder, and baking soda
- Cut in butter to form a coarse mixture
- Make an indention in mixture and add egg substitute, orange peel, and orange juice
- Beat only until lumps disappear
- Add chopped cranberries and walnuts
- Stir until evenly mixed
- Pour batter into prepared pan
- Place pan in cooker, cover, and bake for 3 hours
- Cool loaf in pan for 15 minutes and then remove and cool completely
- Yield: 12 servings
- Per serving: 34 g water; 242 calories (34% from fat, 7% from protein, 59% from carb)
